In-App Purchase goes missing when submitting app for review

I'm currently in the process of submitting a new app with a single non-consumable In-App Purchase.

After creating the IAP in AppStore Connect, I created a synced StoreKit config in Xcode which correctly loaded the purchase.

After making sure that the transaction works as expected within the app, I submitted the app in AppStore connect, including the In-App Purchase.

Since then, the In-App Purchase can not be found in the StoreKit configuration and isn't displayed in the app, which lead to the submission being rejected.

As requested by the review team, I have resubmitted the In-App Purchase, so it's currently "Waiting for Review" but still not showing up in the StoreKit configuration in Xcode.

I'm not quite sure what I'm doing wrong here. I have other apps live in the AppStore with IAPs and no outstanding agreements to sign.

Thank you for your post. We're investigating this issue and recommend submitting your app binary for review. Once you have resubmitted the binary the review can proceed. If you continue to experience issues during review, please contact us.

As the old In-App Purchase is stuck in "Developer Action Needed" and no change to any of the metadata resolves that status, I have now created a completely new In-App Purchase in AppStore Connect and verified that it synced to Xcode and showed up correctly in my app.

I then created an archive of the app, selected that archive with the new (working) In-App Purchase and submitted both for review.

After confirming the submission, the In-App Purchase is gone from Xcode again and therefore not visible in my app anymore (which likely will result in a rejection again). In AppStore Connect, the IAP is now "Waiting for Review".

I have just submitted a request to the contact form, including a screen recording I took.
